HEALTHY COCONUT BROWNIES YOU HAVE TO TRY

Hey guys!

I’ve had a lot of time to experiment with recipes lately. I got sick, and my blood work showed that I have dangerously low levels of iron and hemoglobin, so I’m getting more tests done in the next few days to hopefully figure out what’s wrong (I’ll tell you more soon in a blog post). So, since I can’t leave my house I have to make it fun and yummy, right?!
 
These are literally the best healthy brownies I’ve ever had! They completely satisfy my inner chocoholic & leave me totally guilt-free. No refined sugar, only healthy fats, and lots of nutrients! The brownies are high in iron, calcium & vitamin C, and also contain numerous other micronutrients that are essential to our wellbeing.
 
NOTE
This being called a healthy brownie is only due to the fact there are no empty calories, and all the ingredients are actually beneficial for your health. But that doesn’t mean you can have ten of them, just as you can’t (or aren’t advised to) have ten ‘regular’ brownies. The key to health is balance, guys. So make sure to eat some ‘soul food’ from time to time, it’s ok to treat yourself with some extra calories every now and then (well, every day, in my case hahah).
 
150g organic whole wheat flour
105g organic coconut sugar
60g raw organic cacao powder
60g organic coconut flour
2 eggs
320ml rice/coconut milk
½ cup coconut oil
1tsp vanilla extract
1tsp baking powder
½ tsp baking soda
1tsp salt
 
First, mix all dry ingredients, then all the wet ingredients in a separate bowl, and finally mix them all together. Pour on to a baking sheet, preheat oven to 200°C & bake for 20 minutes.

Brownies always tend to remind me of how good my childhood is. I can still remember how my mom used to make brownies for all of us whenever we are all together. I have to say that my mom's version of caramel brownies are indeed the best that I have ever tried in my whole life. I was already able to have my friends try those brownies as well and they said how they have actually liked it. I felt so happy and proud that I am my mom's daughter of course.
