Apparently the last couple of days I'm extra inspired to cook & create new dishes. I've just recently discovered my love for buddha bowls, not only because they taste great and are super healthy, but also because I LOVE to prepare food & make it look yummy! Here's one of my favourites: black rice, asparagus, butter beans, cabbage, broccoli, zucchini, and cucumber. I cook the veggies and rice (except the cabbage, I fry that on a tsp of olive oil just until it turns a bit brown on the edges), and then just put it all in a bowl! I only add salt, because I'm sadly still not allowed to eat spicy food, but I recommend some pepper, curry, cumin, or whatever you like! You can add the spices to the rice or veggies, as you wish.
